Starter/aperitif for 4 persons:
- 400 g fresh tuna, sushi grade
- 6 tbsp TOPIKÁ Intense olive oil
- Juice and zest of 1 lemon
- Juice and zest of 1 small orange
- 1 snack cucumber
- 1 shallot, finely chopped
- 15 g capers
- Garnish with fresh dill and chives
- Sea salt, pepper

Preparation method
- Start by frying the capers.
- Pat the capers dry with a paper towel. Heat a pan with a thin layer of oil until very hot. Then add the capers to the pan. Fry the capers until crispy, stirring regularly, about 3 to 4 minutes. Line a plate with paper towels and use a slotted spoon to remove the capers from the pan. Place them on the plate with paper towels.
- Make the dressing: mix the olive oil with the zest and juice of the lemon and orange. Add the finely chopped shallot and season with salt and pepper.
- Cut the cucumber into thin slices.
- Slice the tuna as thinly as possible with a sharp knife. Place the slices on a large plate or platter.
- Divide the cucumber over the tuna slices.
- Pour the citrus dressing over the tuna.
- Top with the capers, extra pepper and sea salt, and the dill and chives.
