  • Handful of coriander, coarsely chopped

  • Juice of 1 lime

  • 1 tbsp TOPIKÁ Intense olive oil

  • Salt and pepper

For the tomato salsa:

  • 2 ripe tomatoes, diced

  • ½ red onion, finely chopped

  • 1 clove garlic, pressed

  • 1 tbsp lime juice

  • 1 jalapeño, finely chopped (optional)

  • Salt and pepper

Preparation method

1. Mise en place
Cut the red pepper into cubes, the jalapeño into thin rings and the red onion into half moons.

Guacamole: mash the avocados and mix with the tomato, red onion, coriander, lime juice and TOPIKÁ Intense olive oil. Season with salt and pepper.

Salsa: mix the tomatoes with red onion, garlic, lime juice and possibly jalapeño. Season with salt and pepper.

2. Fry minced meat
Heat 1 tbsp TOPIKÁ Intense olive oil in a pan over medium heat. Add the minced meat and fry until crumbly. Add the Mexican spice mix and season with salt and pepper. Fry until the minced meat is nicely browned and fragrant.

3. Build the baking dish
Take an oven dish and build the salad in layers:

  • Start with a layer of nacho chips

  • Divide half of the minced meat over it

  • Place another layer of nacho chips

  • Divide the rest of the minced meat

  • Top with the red pepper, red onion and grated cheese

4. In the oven
Bake the dish in a preheated oven at 180°C for 30 minutes, until the cheese is melted and golden brown.

5. Finishing & serving
Remove from oven and spoon over guacamole and tomato salsa. Drizzle generously with TOPIKÁ Intense olive oil, drizzle with fresh lime and garnish with cilantro.
