Orzo Salad

With a hint of citrus and spicy chicken fillets, this salad is not only easy to prepare, but also extremely tasty!

Ingredients

    • 300 grams of orzo
    • 1 chicken stock cube
    • 1 tablespoon Topiká Olive Oil
    • 8 small chicken fillets
    • 150 grams cherry tomatoes, cut into quarters
    • 1 red pepper, diced
    • 1 cucumber, cut into cubes
    • Half a red onion, thinly sliced
    • 30 grams of flat-leaf parsley
    • 100 grams of crumbled Topiká Feta (available at Landwaart Culinair)
    • 60 grams of roasted pine nuts
    • Salt and pepper to taste

    Dressing

      • 2 tablespoons Topiká olive oil
      • Juice of 1 lemon
      • Salt and pepper to taste

      Preparation method

        1. Bring a large pot of water to the boil. Add the stock cube. Once the water is boiling, add the orzo pasta and cook according to the package instructions. Drain the orzo and rinse it under cold water.
        2. In the meantime, marinate the chicken fillets with Topiká Olive Oil, salt and pepper. Mix well and season. Heat a large frying pan over medium heat and fry the chicken breasts for about 5 minutes on each side (depending on their size). Remove them from the pan and set aside.
        3. For the dressing: mix all ingredients in a bowl or measuring cup. Season to taste.
        4. For the salad: add the cooked orzo, cherry tomatoes, red pepper, cucumber, red onion, parsley, feta and pine nuts. Drizzle with the dressing and mix the salad well. Season with salt and pepper. Place the fried chicken fillets on top of the orzo salad. Just before serving, sprinkle with some fresh lemon juice.
